INTRO
From Halo Bariti in Gedeb, a region often associated with Yirgacheffe because of its similar climate, soils, altitude, and cup characteristics. Bergamot and apricot lead, with jasmine florals. In the cup: bergamot, apricot, and jasmine.
THE PRODUCER
Although Gedeb is administratively part of the Gedeo Zone, its coffee is often associated with Yirgacheffe because the regions share similar climate, soils, altitude, and cup characteristics. Most coffee is produced by smallholders cultivating less than five hectares, using traditional farming practices, with coffee growing as part of an integrated "coffee garden" intercropped with food crops and other plants. The majority of farms are also organic by default, with little or no fertiliser or pesticide. Local landrace varieties, commonly known as Ethiopian heirlooms, predominate, alongside selections developed by the Jimma Agricultural Research Centre. Together, these practices, diverse varieties, and Gedeb's conditions give its coffees their distinctive, elegant character.
THE PROCESS
Ripe cherries are carefully selected, pulped, and wet-fermented for approximately 12–24 hours. After fermentation, the coffee is thoroughly washed and graded, then slowly sun-dried on raised African beds for around 10–15 days.
The slow raised-bed drying after a short wet fermentation is the defining combination. It's what enhances the clarity, floral character, and bright citrus acidity behind this cup, with a delicate, tea-like finish.
THE CUP
Clear and floral: bergamot brightness leads, with apricot sweetness through the middle and jasmine on a delicate, tea-like finish.
