INTRO A special-edition filter release from The Naughty Dog, sourced from Ethiopia's Yirgacheffe region and processed at the Lalesa washing station. Lively and fragrant, with yellow floral aromatics, juicy raspberry fruitiness, and a delicate pistachio praline sweetness, finished with an orange wine-like maturity. In the cup: yellow flowers, raspberries, pistachio pralines, and orange wine.
THE PRODUCER This lot comes from the Lalesa washing station in Yirgacheffe, with coffee trees growing at 1,900–2,300 masl — an elevation that allows the cherries to mature more slowly and develop more pronounced aromatics. The lot is composed of the heirloom varieties 74110 and 74112, harvested in January 2026 as part of a fresh, clearly traceable crop specifically segregated for filter brewing.
THE PROCESS This lot uses a dry/natural method with an experimental twist: whole cherries — skin and pulp intact — are fermented together with lemongrass leaves rather than through a classic natural process. This approach requires careful monitoring of both fermentation and drying to keep the coffee clean, stable, and well-defined.
The lemongrass-leaf co-fermentation is the defining step — it's what builds the distinctly aromatic, wine-like complexity behind the raspberry and pistachio praline character that define this cup.
THE CUP Lively and fragrant, yet sweet enough to avoid sharpness — juicy raspberry fruitiness up front, a delicate pistachio praline sweetness through the middle, and a slightly wine-like, mature orange wine finish.
