INTRO
A honey-processed Bourbon from the Kageyo Cooperative in Ngororero, with the sweet-and-sour character of black plum and ume and a lingering oolong tea aftertaste. In the cup: black plum, dried plum, and oolong tea.
THE PRODUCER
The Kageyo Cooperative secured a loan in 2009 to build a small washing plant; before that it mainly produced semi-washed coffee. The plant began operating in 2010, serving local smallholders and processing 67 tons of cherries that year, and Kageyo placed second in the 2010 Rwanda Cup of Excellence. It then faced difficulties in 2012 from low production and prices. In 2013 the cooperative began collaborating with the Rwandan trading company RTC, which acquired it in 2015, repaying its debts to third-party lenders while preserving the cooperative's organisational structure. The partnership has grown increasingly stable, and the washing plant continues to improve its capacity and coffee quality through renovations and expansions.
THE PROCESS
This lot is a Honey process: cherries are pulped with the mucilage left on the seed before drying, building sweetness and body. The page gives no further steps.
