Colombia — Julián Calderón Pink Bourbon (Washed)

DETAILS

  • Producer: Julián Calderón (exported by LaREB)
  • Region: Palestina, Huila, Colombia
  • Varietal: Pink Bourbon
  • Process: Washed — 20 hours held in cherry, depulped, 48 hours dry bulk fermentation in open tanks
  • Altitude: 1,650 masl

INTRO From Julián Calderón in Palestina, Huila — right next door to Lorena Pinzón's farm — comes an excellent Pink Bourbon at a similar elevation, exported through LaREB. A bright, purple acai note leads, with an intensely sweet, syrupy body reminiscent of in-house vanilla syrup, cooling into classic rosado pink floral notes and a lovely citric finish. In the cup: acai, vanilla syrup, and pink flowers.

THE PRODUCER This coffee comes through LaREB (La Real Expedición Botánica), a collective of coffee producers and professionals united around pursuing quality and consistency on the producing side, and building long-term partnerships with discerning roasters on the consumer side. Julián Calderón produces this Pink Bourbon at 1,650 masl in Palestina, Huila.

THE PROCESS This lot is Washed, using a fermentation practice favoured by several LaREB producers: cherries are held in-cherry for 20 hours, then depulped and moved into a 48-hour dry bulk fermentation in open tanks.

This dry bulk fermentation after depulping is the defining step — a technique that gives the cup an unusually unique floral and fruit character, enhancing both sweetness and depth beyond a typical washed process.

THE CUP Bright and syrupy — an immediate purple acai note up front, with an intensely sweet body reminiscent of in-house vanilla syrup. As it cools, classic rosado pink floral notes emerge alongside a lovely citric finish.

About this variety

Pink Bourbon, also sold as Rosado, is often chosen for a bright, floral and fruit-forward cup. Tropical fruit, citrus and stone fruit are useful reference points, but the lot’s own notes should lead.

Why this one is different
  • Colombia
  • Huila
  • 1650 masl
  • Washed

Colombian Pink Bourbon often feels perfumed and lifted, with orange blossom, rose, bright citrus, peach or tropical fruit and a silky, tea-like finish. The reviewed coffees range from clean washed lots to naturals and co-ferments, where processing can push the cup towards candy, spice or deeper fruit. The producer's tasting notes are the best guide to this particular bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Pink Bourbon, also called Rosado, became prominent through Colombian specialty producers and is now grown across several regions. The reviewed selection shows why it is sought after: even with very different processes, floral aromatics, lively fruit and a refined texture appear repeatedly.

Identification note Pink Bourbon or Rosado is a widely used Colombian name, but genetic testing shows it is not Bourbon. Some tested lots also contained mixed plant material, so the producer's identification remains important for each coffee.

Classification Reported cultivar

Technical lineage Recent genetic testing places tested Pink Bourbon material with Ethiopian landrace coffee rather than the Bourbon family. The familiar name is retained because it is the name used by producers and roasters.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
