INTRO

This is our first release from Kenya this season. This coffee comes from Nyeri on the western slopes of Mount Kenya—one of the most famous coffee-producing regions in the world. In the cup we find rose hips, pomegranate, and candied grapefruit.


THE PRODUCER

This is our second year working with the Ruarai washing station, located in the highlands on the southwestern slopes of Mt. Kenya. The hills and producers in this region are known for producing dense coffees with complex profiles.

Our appreciation for Kenyan coffee runs deep, and despite the increasing challenges of production in this remarkable place, it remains one of our favourite profiles. We will continue to invest in this region alongside producers working to build something better each year.


THE PROCESS

The Washed process at Ruarai involves:

  • 🍒 Hand-Picked at Peak Ripeness — Selective harvesting
  • 👁️ Hand-Sorting — Only the very best cherries selected
  • 🔧 De-Pulping — Mechanical removal of skin
  • 🧪 Fermentation — ~24 hours fermentation
  • 💧 Channel Floating — Density sorting, defect removal
  • 🌊 Soaking — Overnight soak in fresh water
  • ☀️ Raised Bed Drying — 15 days with continual turning and hand-sorting

This meticulous processing creates the dense coffees with complex profiles characteristic of this renowned region.

Kenya in Nyeri—one of the most famous coffee-producing regions in the world. The hills and producers here are known for producing dense coffees with complex profiles from the legendary SL28 and SL34 varieties.

What is the roast recency?

 

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
