INTRO

This is the first lot of the main Chiroso harvest from Urrao this season. In the cup we find yellow tropical fruit, jam-like sweetness, and fresh hops.


THE PRODUCER

This is the first release from the main harvest in Urrao. This has become one of our most successful buying projects and now represents a significant share of our sourcing in Colombia. The Chiroso variety has transformed the landscape of this region, creating unprecedented access to the specialty market.

With increased competition comes higher prices for producers, along with meaningful improvements in both quality of life and coffee quality. We have been working very hard building a buying programme in the region of Urrao specifically around the variety of Chiroso, partnering with The Coffee Quest to continue developing this project.


THE PROCESS

The Washed process at Perlitas involves:

  • 🍒 Hand-Picked at Peak Ripeness — Selective harvesting
  • ⏱️ In-Cherry Holding — Held for 24 hours
  • 💧 Floating — Density sorting in water
  • 🔧 De-Pulping — Mechanical removal of skin
  • 🧪 Dry Fermentation — 36 hours fermentation
  • ☀️ Raised Bed Drying — 20 days until ~10% moisture content

This careful processing preserves the extraordinary cup quality potential of the Chiroso variety.


THE CUP

Yellow tropical fruit, jam-like sweetness, and fresh hops. The first lot of the main Chiroso harvest from Urrao this season. Chiroso is a newly identified Ethiopian Landrace variety being grown primarily in Antioquia, Colombia, with extraordinary cup quality that has transformed this region's access to the specialty market.

What is the roast recency?

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
