INTRO
SEY's first year purchasing a lot from Tuke Yute in Keramo, Bensa. They've been inspired by his coffees for a couple of years and are pleased to finally release one. A fruit-forward profile. In the cup: strawberry jam, lychee, and rose.
THE PRODUCER
Tuke Yute is a coffee producer in Keramo, one of SEY's favourite growing areas within Bensa. He farms 10 hectares (about 25 acres) at excellent elevation and also buys cherry from thirty neighbours with smaller gardens. This is the first year buying from Tuke, and they look forward to seeing how the relationship develops.
74158 was approved for release in 1979 by the Jimma Agricultural Research Center, one of Ethiopia's federal agricultural research centres, from the Metu Bishari Selections taken from mother plants in the Metu woreda of the Illubabor zone. It was selected and propagated for high yield potential and resistance to coffee berry disease. Around 40 such JARC selections are grown in Ethiopia today.
THE PROCESS
The Honey process for this lot involves:
🍒 Hand-picking — cherries harvested at peak ripeness
💧 Floating — floated to remove defects
⚙️ Quick de-pulping — de-pulped as quickly as possible, intentionally leaving a small amount of mucilage
🌑 Shaded drying — dried on shaded beds with the mucilage intact for three days, until moisture reaches about 10%
THE CUP
Fruit-forward and aromatic: strawberry jam leads, with lychee and rose florality.
