INTRO
A standout first year working with Susan Meneses — SEY doesn't currently buy much coffee from San Adolfo, but this lot marks a real exception, with a visit planned on the next trip to Huila to learn more. Hibiscus tartness leads, with blueberry sweetness and a finger lime brightness throughout. In the cup: hibiscus, blueberry, and finger lime.
THE PRODUCER
This is the first year working with Susan Meneses. Tasting coffees from producers not yet worked with remains one of the most rewarding aspects of the ongoing Huila buying project — a continual reminder of how much remains to be discovered in the region.
Pink Bourbon is a relatively new variety grown primarily in and around Huila, Colombia. It's been genetically identified as an Ethiopian Landrace, though nothing more specific can currently be said about its origins until a larger genetic database exists.
THE PROCESS
Cherries are hand-picked at peak ripeness, floated to further remove defects, then de-pulped the same day. The coffee dry-ferments for 48 hours, is washed, and dries on raised beds until moisture reaches 10.5%.
The 48-hour dry fermentation is the defining step — it's what builds the tart hibiscus and blueberry character behind the finger lime brightness that define this cup.
THE CUP
Tart and bright — hibiscus leads the cup, with blueberry sweetness through the middle and a finger lime brightness on the finish. A promising first look at a new producer relationship.
