INTRO
This farm, historically run by Nicolas's son Abelardo, has produced some of the most dynamic and intense expressions of Pink Bourbon SEY has tasted from Huila, and this lot is no different. In the cup: ripe blackberry, hibiscus, and lime zest.
THE PRODUCER
Nicolas Medina is the father of Abelardo Medina, who produced some of SEY's highest-scoring Pink Bourbon lots to date. Abelardo has since stopped producing coffee, and Nicolas has continued the work in his place. The quality from this farm is among the most striking SEY has encountered, and they plan to visit as soon as they can to learn more about how it's grown and produced.
Pink Bourbon is a relatively new variety grown mainly in and around Huila. It has been identified genetically as an Ethiopian landrace, but nothing more specific is known until there is a larger genetic database.
THE PROCESS
The Washed process for this lot involves:
🍒 Hand-picking — cherries harvested at peak ripeness
💧 Floating — floated to further remove defects
🌙 In-cherry hold — held in-cherry for 24 hours
🌱 De-pulping — cherries de-pulped
⏱️ Dry fermentation — dry-fermented for 36 hours
🚿 Washing — washed clean after fermentation
☀️ Raised-bed drying — dried on raised beds until moisture reaches about 10%
THE CUP
Dynamic and intense: ripe blackberry leads, with hibiscus through the middle and lime zest on the finish.
