THE PRODUCER Guillar Cuéllar farms La Granja in Santa María, Huila — a region that's become a growing focus, with Guillar a new addition to that ongoing exploration. There's real excitement about seeing this producer and region continue to develop.
THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Pink Bourbon's naturally bright, fruity character to come through, building the lemonade acidity and blueberry sweetness that define this cup.
THE CUP Bright and fresh — lemonade acidity up front, fresh blueberry sweetness through the middle, and a subtle florality rounding out the finish.
