INTRO
Kedida Gubata is a new high-elevation separation from SEY's export partners at SNAP. Now in their second year working with them on this lot, they decided to try it as a white honey process. In the cup: honeydew, peach, and coffee blossom.
THE PRODUCER
This lot comes from SNAP, SEY's export partner, as a new high-elevation separation. SEY has now worked with it for two years.
THE PROCESS
This lot is a White Honey: the cherries are pulped, leaving only a small amount of mucilage on the seed before drying. The page doesn't give the detailed steps, but the process builds the sweetness behind the honeydew and peach character.
THE CUP
Sweet and delicate: honeydew leads, with peach and coffee blossom florality.
