INTRO Peach Fizz is a floral, peachy, juicy washed Kurume/Wolisho Ethiopian — a second year working with the Danche washing station, featuring a coffee from Chelbesa. In the cup: peach tea, delicate white florals, and juicy lemon lime acidity.
THE PRODUCER The Danche Washing Station sits in one of the finest coffee-producing areas within the Gedeb Woreda, the Chelbesa kebele, known for its dense vegetation structure of banana trees and shade-grown coffee. The wet mill's fermentation tanks are built with ceramic, which helps bring added clarity to the coffees processed there.
THE PROCESS Once cherries arrive at the Danche station, they're placed in water for sorting and removal of floaters, then undergo a 96-hour dry fermentation.
The ceramic fermentation tanks combined with the extended 96-hour dry fermentation are the defining detail here — together they build the clean, sparkling clarity behind the peach tea and lemon lime brightness that define this cup.
