INTRO A fifth consecutive harvest from Putushio and Jose Jijón — the only roaster in Canada trusted to feature this coffee. Fresh green grapes and sparkling lemon-lime lead, with a sweet yellow plum depth. Mejorado is loved for its deep sweetness, but this lot is also sparkling clean, with a very light body. In the cup: green grapes, sparkling lemon-lime, and yellow plum.

THE PRODUCER Jose Jijón is a 19-year-old aspiring producer with a deep passion for coffee, son of Pepe Jijón — the award-winning producer behind Finca Soledad, where Jose has learned and worked for much of his life. Jose's own farm, San Pedro, together with Francisco Vintimilla's farm, makes up Fincas Del Putushio — a sister-farm duo creating the next evolution in coffee farming for the Jijón family. The farm is very small with limited production, making each year's harvest a genuinely lucky get.

THE PROCESS This coffee is traditionally washed. The Mejorado is picked and depulped the same day, left overnight in dry parchment, then rinsed in fresh spring water and slow-dried on covered raised beds for thirty days.

The overnight dry-parchment rest ahead of rinsing is the defining step — combined with the extended 30-day slow drying, it's what builds the clean, sparkling character behind the green grape and lemon-lime brightness that define this cup.

THE CUP Sparkling clean with a very light body — fresh green grapes and sparkling lemon-lime lead, with a sweet yellow plum depth and a clean finish. Mejorado's deep sweetness at its most refined.
