INTRO
The third coffee from Los Capachos, Eyder Martinez's family farm, and the first Pink Bourbon from it. Eyder once worked for El Paraíso as their biochemical engineer and coffee processor, and September has built a direct relationship with him over the past couple of years. A lively, vibrant profile of honeydew melon, pink jolly ranchers, and blackberries, reminiscent of favourite anaerobic washed coffees, with a honeydew-like sweetness and a juicy citric acidity. In the cup: honeydew melon, pink jolly ranchers, and blackberries.
THE PRODUCER
Los Capachos is a farm in Florencia, in the south of Cauca near Nariño, a region known for mineral soils that give coffees unique terroir. Quality is enhanced by organic handling and protection of the soil with native shade species that aid nutrient absorption. The lot was grown and cared for by Eyder's grandfather, who grows Geisha, Pink Bourbon, and Sidra.
Pink Bourbon is a variety primarily grown in Huila, Colombia, and while newer, it has quickly grown in popularity for its bright, sweet, aromatic profiles. It is now known to be an Ethiopian Landrace, though further information isn't available.
THE PROCESS
After picking and sorting, the coffee was held in cherry for a 72-hour aerobic fermentation, followed by a traditional washed process, and dried in a solar dryer for an average of 8 days.
The 72-hour aerobic cherry fermentation is the defining step. It's what builds the vibrant honeydew and candy-like sweetness behind this cup, while the washed finish keeps it clean.
THE CUP
Lively and vibrant: honeydew melon sweetness with pink jolly rancher candy and blackberries, and a juicy citric acidity. Round in body with a long, sweet finish.
