INTRO Mellow Yellow from Los Patios in La Plata, Huila, blends traditional Colombian coffee with sweet peach notes through a unique co-fermentation process developed by Sandbox's own R&D team. A smooth cup with hints of peach sweetness — a perfect example of innovation enhancing classic Colombian flavour. In the cup: peach and passion fruit.
THE PRODUCER Los Patios is a dedicated processing HQ in La Plata, Huila, working with local producers on farms ranging from 1,600 to 1,900 meters, typically around three hectares each. Cherries come from various small-scale farmers in the region, carefully grown and harvested with a focus on quality, then processed at Los Patios to unlock their full potential — the foundation for coffees like Mellow Yellow.
The Colombia variety used here is known for a balanced, traditional profile, grown at high altitudes in La Plata's fertile soils — a solid base for the innovative co-fermentation process layered on top.
THE PROCESS Co-fermentation at Los Patios begins at farm level, where local producers carry out a 12-hour aerobic fermentation in cherry before depulping and delivering the wet parchment to the facility. There, Sandbox's R&D team introduces a commercial cherry concentrate alongside a proprietary solution, and the coffee undergoes a two-day fermentation and absorption phase, during which fruit precursors integrate into the beans. After draining, the coffee dries on patios for 12 to 16 days, monitored and rotated continuously for even moisture removal.
The two-day peach concentrate absorption phase is the defining step — it's what infuses the peach and passion fruit sweetness directly into the bean, building the signature flavour of this coffee.
THE CUP Smooth and sweet — peach notes lead the cup, with a passion fruit brightness alongside. A clean showcase of what co-fermentation can add to a traditional Colombian base.
