INTRO

A genuinely exciting decaf from Finca Los Nogales in the highlands of Huila — hand-picked, carefully fermented, and decaffeinated via a naturally derived sugarcane Ethyl Acetate process that preserves the vivid character of the underlying coffee. In the cup: bright lemon acidity, sour candy sweetness, and delicate red florals.

THE PRODUCER

Finca Los Nogales is a family-run farm in Huila, managed by the Hernández family across generations. Their focus on quality and innovation is evident at every stage — from the selective hand-picking of ripe cherries through to meticulous fermentation management. Typica, one of the oldest and most celebrated Arabica varieties, is well suited to the high-altitude microclimates of Huila, where cooler temperatures allow the variety to develop its characteristic elegance, brightness, and subtle fruit and floral complexity.

THE PROCESS

The Washed and Sugarcane EA Decaf process at Finca Los Nogales involves:

🍒 Hand-picking — Cherries selected at peak ripeness 💧 Washing — Coffee processed using the washed method 🧪 Controlled fermentation — A long, carefully managed fermentation to develop sweetness and complexity 🌱 Sugarcane EA decaffeination — Caffeine gently removed using naturally derived Ethyl Acetate from sugarcane, preserving the coffee's fruit notes and clean profile

The sugarcane EA decaffeination is the defining step — unlike chemical solvent methods, EA derived from sugarcane is considered a natural process, making it the preferred choice for specialty decafs where preserving cup quality is paramount.

THE CUP

A rare decaf that demands to be taken seriously — bright, layered, and floral, with all the vitality of a fully caffeinated specialty coffee. The Hernández family's meticulous approach shines through in a cup that offers genuine complexity without compromise.

About this variety

Typica is often valued for a clean, elegant and sweet cup rather than heavy intensity. Floral, citrus and soft fruit notes can appear in carefully grown lots.

Why this one is different
  • Colombia
  • Huila
  • Washed, Sugarcane Decaf

The reviewed Colombian Typicas are delicate and aromatic, with violet or raspberry leaf, white peach, pear, lychee and red grape, often finishing with a tea-like freshness. Washed processing keeps the profile clear, while honey processing adds softness and sweetness. A decaffeinated lot can still retain that floral, fruit-led character when handled carefully.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Typica is one of coffee's oldest widely travelled varieties and has a long history in Colombia. It is less productive than many modern alternatives, so today's single-variety Colombian lots are often small, high-grown selections where cup quality and producer care take priority.

Identification note This small reviewed set includes washed, honey and decaffeinated coffees. Their shared delicacy is useful context, but individual fruit notes and texture are also shaped by elevation and processing.

Classification Historic Arabica family

Technical lineage Typica belongs to the Typica-related Bourbon-Typica group and traces the historic route from Ethiopia through Yemen, India and Java before reaching the Americas.
