INTRO

We have been working with this coffee since 2019 and we are so happy to have it back! Now in our seventh year working with Chelchele, we continue to value their outstanding quality and consistency.

THE PRODUCER

From the highlands of Gedeb, Ethiopia, this coffee comes from hundreds of smallholder farmers growing heirloom varieties with exceptional care. Every cup reflects a shared commitment to sustainability, traceability, and Ethiopia's rich coffee heritage.

Carefully washed and slowly dried at 2000 metres above sea level, the Chelchele Processing Site continues to demonstrate the outstanding quality and consistency that has made it a valued partner for seven consecutive years.

THE PROCESS

The Washed process at Chelchele involves:

  • šŸ’ Cherry Selection — Careful picking at peak ripeness
  • šŸ”§ De-Pulping — Mechanical removal of skin and mucilage
  • šŸ’§ Fermentation — Traditional wet fermentation
  • 🚿 Washing — Thorough washing in clean water
  • ā˜€ļø Slow Drying — Careful slow drying at high altitude

This meticulous washed process delivers vibrant sweetness, elegant florals, and lively citrus notes characteristic of high-altitude Gedeb coffees.

THE CUP

It delivers vibrant sweetness, elegant florals, and lively citrus notes, with juicy peach, delicate jasmine, and a bright lemon zest finish. Every cup reflects a shared commitment to sustainability, traceability, and Ethiopia's rich coffee heritage, carried through seven years of continuous partnership with these smallholder farmers.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Ethiopia
  • Gedeb, Gedeo
  • 1900-2100 masl
  • Washed

In Ethiopia, local selection, replanting and farm history can shape a mixed population over many generations.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
