INTRO Chirosos are on the rise — and this lot from Juan Pablo Zapata's Finca La Mata De Guadua landed fresh at the roastery and is tasting great. Peach, raspberry, and raisin lead, with a hint of tropical fruit mélange in the finish. In the cup: peach, raspberry, and raisin.

THE PRODUCER Juan Pablo Zapata farms a 20-hectare plot at 2,100 meters in Urrao alongside his brother and father. Many food crops grow on the farm, and Juan has noticed his coffee thriving under the shade of the banana trees planted nearby — something he hopes to lean into further. This is a new relationship between vendor The Coffee Quest and the Zapata family, and this first coffee is a tremendous start.

THE PROCESS This lot uses the "Cochadas" method: as cherries are harvested day by day, the just-harvested coffee is added to the existing fermentation pile. This snowball effect produces a coffee with a wide range of flavours — some barely fermented, some carrying 4-5 days of fermentation. After a final washing step, the coffee dried in a marquesina for 10-15 days.

The cumulative, day-by-day fermentation pile is the defining step — it's what builds the tremendous range of peach, raspberry, and raisin character, along with the tropical mélange in the finish.

THE CUP Fresh and expressive — peach and raspberry sweetness up front, raisin depth underneath, with a hint of tropical fruit mélange lingering in the finish. A tremendous start to a new producer relationship.
