INTRO

From Doña Blanca Bolaños at Finca El Diviso in Tolima — a semiwashed Pink Bourbon roasted a touch darker than Prodigal's filter version, making exceptional straight shots and Americanos. Despite sitting closer to honey than washed in its processing, the fermentation character is tame and the fruit is lush — cherry and orange up front, backed by a warm maple richness that carries beautifully through milk.

THE PRODUCER

Finca El Diviso has been Doña Blanca Bolaños's home and agricultural playground for many years. She takes pride in caring for her plants from start to finish — improving her crop through continuing education and inspiring the next generation of producers through her example. A finalist at the prestigious Cup of Excellence competition, Blanca's dedication and precision are evident in every lot that leaves El Diviso.

Pink Bourbon is a variety grown primarily in Colombia, genetically identified as Ethiopian Landrace and belonging to the Core Ethiopia group alongside Gesha, Chiroso, Sidra, and Aji. Prized for its vivid fruit character, elegant florality, and distinctive bright acidity, it responds particularly well to semiwashed processing — where the retained mucilage builds depth and sweetness without overwhelming the variety's intrinsic clarity.

THE PROCESS

The Semiwashed process at Finca El Diviso involves:

🍒 Hand-picking — Only ripe cherries collected and sorted by density 🔧 Depulping — Outer skin removed while the inner mucilage layer is left fully intact 🔒 Anaerobic fermentation — Beans fermented anaerobically for 48 hours with mucilage intact ☀️ Canopy bed drying — Dried on airflow canopy beds for 18–24 days

The 48-hour anaerobic fermentation with mucilage intact is the defining step — fermenting in a sealed, oxygen-free environment with the fruit's sugars still present builds the deep cherry and orange character and maple richness that define this lot, while the extended canopy drying locks in the clean, lush fruit profile and preserves the structure needed for an exceptional espresso.
