INTRO A new-to-us farm in Honduras, and a lovely addition to the menu — Finca Las Buchanas' Sidra, with punchy cherry and orange flavours alongside a creamy, soft persimmon character. In the cup: cherry, persimmon, and orange.

THE PRODUCER Edis Joel Ávila manages Finca Las Buchanas at 1,750 meters. His love for the land and agriculture began with his mother, and he's worked to elevate his coffee to new levels of quality. This coffee was brought in by Stephen at The Coffee Quest, in partnership with a Honduran organisation working to improve Honduran coffee and reduce reliance on agrochemicals.

THE PROCESS This coffee was traditionally washed, simply. Ripe cherries were picked, de-pulped, and briefly fermented for 10-12 hours. After triple-washing, the coffee dried on raised beds for 12-16 days.

The brief 10-12 hour fermentation combined with triple-washing is the defining step — it's what keeps the cup clean and structured, letting the punchy cherry and orange character come through alongside a soft persimmon creaminess.

THE CUP Punchy and lovely — cherry and orange flavours up front, with a creamy, soft persimmon character rounding out the finish. A clean, simply washed Sidra from a promising new farm relationship.
