INTRO
Fredy Perez is a longtime producer in San Andrés, Lempira, and one of the people who first helped Onyx find their footing in this relatively young coffee-producing region. Tart apple and pecan lead, with fig sweetness and an allspice finish. In the cup: tart apple, pecan, fig, and allspice.
THE PRODUCER
Fredy grew up producing coffee alongside his father before purchasing his own parcel in 2008. Today he farms with his wife, Glenis, near Caona, San Andrés, at elevations reaching around 1,800 meters. His coffees are rooted in traditional varieties and careful washed processing, emphasising clean fermentation, slow drying, and consistency over overly complicated techniques. Onyx's work in San Andrés began around 2021, and Fredy was one of the first producers to help them understand the area, becoming an impromptu leader in the community by making introductions, coordinating communication, and connecting them with neighbouring producers. He first entered the Honduras Cup of Excellence in 2019, and in 2023 his coffee placed 14th nationally.
THE PROCESS
This lot is Washed, with an emphasis on clean fermentation and slow drying, and dried on patios.
The careful, unfussy washed process, with clean fermentation and slow drying, is the defining approach. It's what builds the clean, structured tart apple and fig character behind this cup.
THE CUP
Clean and structured: tart apple brightness leads, with pecan and fig through the middle and a warm allspice finish.
