INTRO

The Washed process brings out the very best in the Gesha variety — complex, delicate, and elegant. This lot from the Fellow Farms Project showcases floral notes of roses, tropical lychee, and sweet candied orange in both aroma and flavour. The body is creamy with a honeyed acidity, and the aftertaste is long and pleasant, leaving a lingering hint of rose petals.

THE PRODUCER

Since 2022, the Fellow Farms Project has collaborated with partner farms in Huila and Cauca, purchasing coffee from small-scale producers at premium prices whilst providing training on best practices in farming and harvesting. The project also works with AMCAPEC, an association of women coffee farmers from the municipalities of Tambo, Piendamó, and Caldono in Cauca.

This initiative helps small-scale producers sell their coffee more transparently and with greater profit. All coffee from the project is processed at Finca La Inmaculada, guaranteeing consistency and full traceability for each lot.

THE PROCESS

The Washed Process at Finca La Inmaculada involves:

  • 🍒 Reception — Cherries from neighbouring farms are received at La Inmaculada
  • 💧 Flotation Selection — Separates leaves, stones, and low-density cherries
  • 🔧 Electronic Sorting — Selects cherries with optimal ripeness
  • 👁️ Manual Sorting — Final quality check by hand
  • 💧 Destoning & Washing — Highest-quality cherries are destoned and washed
  • ☀️ Controlled Drying — 15 days until 10.5% moisture content is reached

This meticulous multi-stage process develops the clean, elegant profile that makes washed Gesha so prized.

THE CUP

The aroma is complex, delicate, and elegant. Floral notes like roses, tropical notes like lychee, and sweet notes like candied orange are present in both the aroma and the flavour. The aroma also features notes of cocoa powder, syrup, and green grapes. The body is creamy with a honeyed acidity. The aftertaste is long and very pleasant, leaving a lingering hint of rose petals.
