INTRO
A sweet, juicy coffee with persimmon, orange blossom honey, and dulce de leche as its main notes. As it evolves, slight touches of 70% chocolate, sponge cake, a hint of nectarine, and candied nuts come through. In the cup: persimmon, orange blossom honey, and dulce de leche.

THE PRODUCER
This lot is a Pacamara from El Salvador, grown at 1,250–1,400 masl, roasted by Nomad in the immersion bag format. The bag uses Sibarist's High Permeability filter technology, designed for excellent extraction with low agitation, giving a clean, balanced cup with a light, silky body. Each coffee is roasted fresh in small batches, and the roaster's own profile is used without modification for the bag format.

THE PROCESS
This lot is Semi-Washed, a method that removes part of the fruit before drying while leaving some mucilage, which builds the sweet, juicy persimmon and dulce de leche character behind this cup.

THE CUP
Sweet and juicy, with a creamy body and juicy acidity: persimmon, orange blossom honey, and dulce de leche, with touches of chocolate, sponge cake, nectarine, and candied nuts as it evolves.

Brew Guide: Add the bag to a cup, pour 200 ml of 96°C filtered water, dunk 15 times top to bottom, steep for 8 minutes, then remove the bag.

About this variety

Pacamara can be highly aromatic and more full-bodied than many delicate varieties. Ripe fruit, florals and spice are common reference points in high-quality lots.

Why this one is different
  • El Salvador
  • Washed

Salvadoran Pacamara often produces a broad, creamy cup with ripe fruit and lingering sweetness. The reviewed lots show persimmon, apricot, plum and dried berries, followed by orange-blossom honey, milk caramel, dulce de leche or warm clove. Semi-washed and extended-fermentation lots add their own texture and intensity, so the process remains an important guide.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Pacamara was developed in El Salvador and remains especially closely associated with the country's high-grown specialty farms. The reviewed coffees come from Juayúa, Santa Ana and Chalatenango, where producers use slow drying and carefully managed fermentation to shape its large-bean potential.

Identification note Pacamara is not fully uniform from one generation to the next. These examples also use different fermentation and drying methods, so their specific fruit, spice and caramel notes should not be treated as guaranteed variety traits.

Classification Salvadoran cross

Technical lineage Created by the Salvadoran Institute of Coffee Research from Pacas and Maragogipe. The variety can produce exceptional cups but is not genetically uniform across every planting.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
