INTRO A first-time collaboration with Finca Don Alberto — an especially expressive yeast-inoculated natural Gesha, for those who enjoy a more pronounced fermentation profile where the processing amplifies the fruit without losing clarity. The cup opens with a sweet plum character accented by a gentle savoury saltiness reminiscent of cooked ume, before bright passionfruit takes over with tropical intensity. In the cup: ume, passionfruit, and strawberry sangria.

THE PRODUCER Finca Don Alberto sits at 2,200 masl, offering ideal conditions for specialty coffee production — a mountain climate with high humidity, frequent rainfall, and fog, with temperatures ranging from 9°C at dawn to 27°C at midday, favouring complex, distinctive cup profiles. The farm implements responsible agricultural practices focused on environmental conservation, using native shade trees and planting species like Quillotocto and Guamo Machete in areas without tree coverage. Agricultural management aims to minimise impact on local wildlife and preserve soil health through balanced fertilisation, acidity correction, and organic fertilisers — all in service of the farm's core objective: continuously improving coffee quality through new fermentation research and precise harvest and post-harvest management.

THE PROCESS This natural Gesha begins with hand-picking and flotation sorting to remove impure cherries and defects. Whole cherries are then placed in GrainPro bags for 48 hours to ferment alongside a local yeast culture, before drying for 28 days on African beds.

The 48-hour yeast-inoculated fermentation is the defining step — it's what amplifies the fruit-forward character behind the ume, passionfruit, and strawberry sangria notes, while keeping the layers well integrated despite the bold profile.

THE CUP Bold yet clear — a sweet plum character with a gentle savoury saltiness reminiscent of cooked ume opens the cup, giving way to bright, unmistakably tropical passionfruit through the middle. As it cools, strawberry sangria notes emerge, supported by a lively, wine-like acidity that gives the coffee a sparkling, energetic finish.
