DETAILS

  • Region: Alta Verapaz, Guatemala
  • Varietal: not specified for this lot (the farms grow Caturra, Catuaí, Bourbon, Sachimor, Obatã, and Tupí, among others)
  • Altitude: 1,500 masl
  • Roast Profile: Mirra "white coffee," selected and roasted to stand up to milk, still pleasant black

INTRO
The next lot in Mirra's lineup of white coffees, from Luis Valdez of Finca San Lorenzo. Specially selected and roasted to stand up nicely to milk, it's pleasant black too. A classic sweet, mild, round Guatemalan profile. In the cup: stewed pears, speculaas cookie, and caramel.

THE PRODUCER
Luis Valdez is the third generation of coffee producers in his family and has two farms, Santa Isabel and San Lorenzo, the latter the origin of this lot. Finca San Lorenzo sits at 1,500 masl in Alta Verapaz, a region characterised by year-round rainfall. His farms total over 70 hectares, growing Caturra, Catuaí, Bourbon, Sachimor, Obatã, and Tupí among other experimental varieties. While studying agricultural engineering at university, he made frequent visits to the Los Volcanes cooperative to learn the agriculture of coffee, and since graduating in 1999 he has cultivated specialty-grade coffee with an eye toward constant annual improvement.

THE PROCESS
The page doesn't specify processing steps for this lot. It was selected and roasted specifically to work with milk, with a mild, rounded profile.

THE CUP
Sweet, mild, and round: stewed pears lead, with a speculaas spice-cookie warmth and caramel sweetness, delicious with milk and equally pleasant black.

Washed

In this coffee

Elegant sweetness with a beautifully round body. Versatile across black & milk drinks.

  • Caramel
  • Speculaas Cookie
  • Stewed Pear

How it works The fruit is removed from the coffee seed. Water and fermentation then help clear away the sticky layer before the seed is dried.

Typical influence Washed coffees are often described as clean and bright, with clear flavours, lively acidity and a crisp finish.

Coffee Variety

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Guatemala
  • Alta Verapaz
  • 1500 masl
  • Washed

In Guatemala, local selection, replanting and farm history can shape a mixed population over many generations.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
