INTRO
After a long search for a super tasty, unique washed Maragogipe, this lot from Augustin Ccoyo is both Mirra's first beautiful washed Maragogipe and the perfect coffee for a collaboration with their friends at Secret Coffee, BK. A rich, viscous, syrupy experience, starting with strong black cherry, creamy milk chocolate, and the sweet juiciness of ripe apricot. In the cup: black cherry, milk chocolate, and apricot.

THE PRODUCER
Located at 2,050 masl in the Cusco region of Peru, Augustin and his wife have been coffee producers their entire lives, and Finca Progreso has been handed down through generations of their family. The high altitude and mildly tropical climate let Augustin achieve a high degree of consistency in quality year to year. He adds that highly selective harvesting and slower shade drying are the keys to quality on his farm. Finca Progreso is a small operation, with only 4 hectares under cultivation.

Maragogipe is a natural mutation of Typica, best known as the largest variety in production by bean size, first discovered in 1870 in the Maragogipe municipality of Bahia, Brazil. It's the parent of several other varieties, including Pacamara, Maracaturra, and Marageisha. Because of its small yields and high susceptibility to pests and disease, it has never been cultivated at scale, which keeps it rare. It remains in production at a select number of smaller, quality-driven farms across Latin America for its unique profile and quality potential.

THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying. Combined with Augustin's highly selective harvesting and slower shade drying, it lets Maragogipe's rich, syrupy character come through, building the black cherry and apricot sweetness behind this cup.

THE CUP
Rich, viscous, and syrupy: strong black cherry leads, with creamy milk chocolate through the middle and the sweet juiciness of ripe apricot.

Coffee Variety

In this coffee

Rich, syrupy and round bodied. A rare varietal roasted with extreme care and precision.

  • Apricot
  • Black Cherry
  • Milk Chocolate

About this variety

Maragogipe is known first for its unusually large beans. In the cup it can feel delicate and aromatic, but quality varies widely, so the product notes are especially important.

Why this one is different
  • Peru
  • Cusco
  • 2050 masl
  • Washed

This Maragogipe is from Peru, where altitude, farm selection and processing shape whether the cup feels delicate, fruity or more rounded.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Maragogipe is a tall, very-large-beaned mutation of Typica first identified in Brazil. It later became important in breeding, including as a parent of Pacamara.

Classification Typica mutation

Technical lineage Natural mutation of Typica.
