INTRO
Lot 008, named La Leyenda ("the legend") by the family for their father, who with their mother pioneered these farms and planted the first Laurina trees at the estate 70 years ago. The seed is still that heirloom line. In the cup: mandarin, grape, panela, and green tea.
THE PRODUCER
Camiseta is the Suárez family's farm in El Salto, the cool high ground above Boquete on the road up to Volcán Barú, where temperatures run 13–22°C. The family's coffee roots in Boquete go back to 1900, and in 1948 Vidal and Eira Suárez started their own farm in El Salto. Today two of their six children, Carlos and Laura, run the farms as Grupo Vicala under the El Salto Premium Coffee name, across Camiseta, Los Limones, and Doña Eira.
Laurina is a natural mutation of Bourbon with small, pointed beans and naturally low caffeine (about 0.6%, roughly half of a typical Arabica). Discovered on Bourbon Island (Réunion) in the early 1800s, it nearly disappeared after sugar cane took over, and was rescued from 2002 by the Réunion region and CIRAD; a handful of farms in Costa Rica, Nicaragua, and Panama now grow it. It yields very little, but the cup is quiet and sweet, with a creamy texture and almost no bitterness.
THE PROCESS
The cherries were floated and sorted by hand, then sealed in tanks for 48 hours before drying whole. They dried 27 days in the shade on African beds, cooled by the mountain breeze, and finished with 8 hours in a static dryer at 39°C.
The 48-hour sealed-tank rest followed by 27 days of slow shaded drying is the defining combination. It builds the panela sweetness and keeps the cup elegant and green-tea clean.
THE CUP
Quiet, sweet, and elegant: mandarin and grape lead, with panela sweetness and a green tea finish.
