INTRO
An award-winning microlot of washed Gesha: elegant, expressive, and remarkably refined, offering the distinctive character looked for in exceptional competition lots. Delicate yellow plum, fig, and Earl Grey, with a vibrant yet rounded mouthfeel and a beautifully refined sweetness. In the cup: yellow plum, fig, and Earl Grey.
THE PRODUCER
Yilver Andrés Pajoy is a second-generation coffee grower from the vereda of Alto Cañada, in the municipality of La Plata, on the western border of Huila with Cauca. He is the cousin of fellow Osito partner producers Yesid Pajoy and Didier Pajoy, who also runs Osito's La Plata municipal warehouse and buying station. Yilver has grown coffee for 14 years on his four-hectare farm, Finca El Arrayan, on the steep, green hills of La Plata. He currently cultivates three hectares at 2,500 trees per hectare, with Caturra, Caturra Chiroso, and Gesha. Alongside coffee, Yilver and his family grow beans and raise cattle.
THE PROCESS
The fifth-place Gesha microlot was fermented in cherry for 36 hours after coming in from the fields. The cherries were then depulped and dry-fermented for another 36 hours, rinsed, and placed to dry on raised beds inside a parabolic greenhouse dryer for 18 days.
The two 36-hour fermentation stages, first in cherry and then dry after depulping, followed by slow greenhouse drying, are the defining combination. They're what built this competition-placing cup's refined sweetness and the yellow plum and Earl Grey character.
THE CUP
Elegant and refined: delicate yellow plum, fig, and Earl Grey, with a vibrant yet rounded mouthfeel and a beautifully refined sweetness.
