THE PRODUCER
Fredy Orantes is a true leader among the coffee growers of Santa Rosa, working tirelessly to maintain high standards in the field and during harvest. He's an expert with both larger lots and small microlots, and every aspect of picking and processing is done with care. He thinks constantly about sustainability on the farm, caring for a variety of trees (grevillea and cuje are most numerous, alongside fruit trees and native trees) and maintaining the soil with composted organic materials such as fallen leaves, branches, and coffee pulp. Native animals and birds come and go freely, and Fredy notes the farm isn't even fenced in.
Fredy loves experimenting with varieties and processes, and this lot is a perfect example. He added about 25 cuerdas (1 hectare) of Pacamara in 2019, and the trees have begun producing fruit.
THE PROCESS
After meticulous picking, where workers select only the ripest cherries, the coffee goes into clean sacks for approximately 48 hours of fermentation. It then moves to raised beds positioned to take advantage of the abundant sunlight in Fraijanes, drying for about 25 to 30 days with frequent turning for thorough, even drying.
The 48-hour sack fermentation followed by 25–30 days of slow raised-bed drying is the defining combination. It's what builds the green grape and honey sweetness behind this cup, while the lime keeps it bright.
THE CUP
Silky and bright: green grapes lead, with lime brightness through the middle and a honey sweetness on the finish.
