INTRO
A remarkable Geisha from Finca Deborah in the highlands of Volcán, Chiriquí. Lavender and grape open the cup, with juicy strawberry and a red grape sweetness, finishing on subtle jasmine. In the cup: lavender, strawberry, red grape, and jasmine.

THE PRODUCER
This lot is produced by Jamison Savage at Finca Deborah, in the highlands of Volcán, Chiriquí, Panama, at 1,950 masl.

THE PROCESS
This lot is a Classic Natural: cherries are dried whole, allowing the fruit to impart its character directly into the bean. This approach is what builds the elegant combination of delicate florals, vibrant fruit, and deep, tea-like sweetness behind this cup.

THE CUP
Elegant and aromatic: expressive lavender and grape open the cup, followed by juicy strawberry and a rich red grape sweetness. As it cools, subtle jasmine emerges, adding depth and a refined finish. Best with a light roast to preserve its floral character and layered fruit sweetness.

How it works The whole coffee cherry is dried with the fruit intact, often on raised beds or patios. The dried fruit is removed afterwards.

Typical influence Natural coffees are often described as sweet and full-bodied, with ripe berry or tropical-fruit flavours and sometimes a gentle wine-like note.

About this variety

Coffees reported as Gesha or Geisha are often prized for a delicate, tea-like cup with lifted floral aromas and bright fruit. Jasmine, bergamot and peach are common reference points, but each lot can express them differently.

Why this one is different
  • Panama
  • Chiriquí
  • 1950 masl
  • Natural

Panamanian Geisha, especially well-traced T2722 grown at high altitude, is the classic reference for a very delicate, jasmine-led and peach-like cup.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

Why the Gesha / Geisha name matters

Gesha and Geisha are interchangeable spellings, not proof of different varieties. The best-documented Panamanian Geisha descends from Ethiopian material recorded as T2722, while other coffees carrying either spelling may not be genetically identical.

Classification Reported Gesha / Geisha

Technical lineage The reported name alone does not establish one genetic lineage. Confirmed Panamanian T2722 traces to Ethiopian landrace material.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
