This naturally processed Gesha comes from a meticulously curated signature lot at Finca Inmaculada, with just 405 kg of cherry selected and dried slowly over 25 days on raised beds. The result is a coffee of striking clarity and depth — a standout example of what Gesha can achieve when precision and care are applied at every stage of production.

The profile is vibrant and expressive: raspberry-forward with a delicate floral quality from the ginger flower, underpinned by a sweeping tropical character that lingers in the finish.


THE PRODUCER

Finca Inmaculada is a pioneering specialty estate located in Pichindé, Cali, within Colombia’s Valle del Cauca region. Nestled at 1,750–2,000 metres above sea level in the foothills of the Farallones National Park, the farm spans 60 hectares, with more than half dedicated to rare and exotic varieties including Sudan Rume, Laurina, Geisha, and the extraordinarily scarce Eugenoides.

Inmaculada is renowned for its commitment to sustainability and innovation. The farm avoids synthetic fertilisers and agrochemicals entirely, practising agroforestry methods that preserve the unique terroir of the Farallones foothills. This dedication to the land is matched by an equally rigorous approach to post-harvest processing, with the family overseeing everything from selective cherry picking through to in-house milling and vacuum packing.

The result is a level of traceability and quality control that is rare even within the specialty sector — making each Inmaculada release an occasion.


THE PROCESS

The Natural process at Finca Inmaculada is characterised by careful lot selection and unhurried drying:

  • 🍒 Cherry Selection — Only the ripest cherries are harvested; this lot comprised a single curated selection of 405 kg of cherry.
  • Quality Sorting — Cherries are sorted for defects and consistency immediately after picking.
  • ☀️ Raised Bed Drying — Whole cherries are dried slowly on raised beds over 25 days, allowing fruit sugars and aromatics to integrate fully into the bean.
  • 📦 In-House Milling — Processed in Inmaculada’s own mill, then vacuum-packed to preserve freshness and traceability.

The extended drying time and immaculate lot curation are what give this coffee its pronounced fruit intensity alongside the clarity characteristic of the farm’s best naturals.


THE CUP

Vivid and expressive, this Gesha opens with a bright, perfumed raspberry note that carries into a wisp of ginger flower — delicate and lingering.
