INTRO

Condor Ridge Ranch is the oldest coffee farm in California — planted in 2002 by FRINJ co-founder Jay Ruskey on the hills above the rugged Gaviota coast, a microclimate that consistently yields FRINJ's most celebrated coffees. This Natural lot draws on extended fermentation to deepen the Gesha's inherent complexity: cherries were picked at peak ripeness, fermented whole for two days in open-air barrels, then slowly dried on raised beds before finishing in a climate-controlled drying room.


THE PRODUCER

FRINJ Coffee is a pioneering seed-to-cup company producing terroir-driven coffees from California. Founded in 2017 by Jay Ruskey, Andy Mullins, Juan Medrano, and Lindsey Mesta, FRINJ works with a network of farms from San Luis Obispo to San Diego. Condor Ridge Ranch earned global recognition when one of its Washed Geshas was selected for the 2026 Dubai Coffee Auction. California farmers in the FRINJ network receive over half the sales value — compared to just 2–5% globally.


THE PROCESS

The Natural process at Condor Ridge Ranch involves:

  • 🍒 Selective Hand-Picking — Cherries harvested at peak ripeness
  • 📅 Open-Air Barrel Fermentation — Whole cherries fermented for approximately 48 hours in open-air barrels
  • ☀️ Raised Bed Drying — Slowly dried on raised beds
  • ❄️ Climate-Controlled Finishing — Final drying completed in a climate-controlled room
  • Milling & Sorting — Milled, classified, and hand-sorted to SCA green grading standards

Extended natural fermentation adds depth and fruit-forward complexity whilst preserving the Gesha's signature elegance.
