INTRO
This one jumped off the table during early-year sampling — a total screamer. For those who remember Santa Librada and La Esperanza, this washed Pink Bourbon is in a similar vein: loads of acidity and intensity in a very clean cup. In the cup: blackberry, white peach, and jasmine.

THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Pink Bourbon's naturally intense, acidic character to come through with clarity, building the tart blackberry brightness that defines this cup.
THE CUP
A shock of acidity starts the cup off — tart berries and stonefruit give way to softer florals on the finish, especially as it cools. Tart, juicy, and taffy-sweet, with a quite acidic balance and a slight floral linger.
