INTRO
El Dorado is one of Ecuador's most decorated specialty coffee estates, and this Wush Wush — processed through an extended double-fermentation wash — is among its most striking lots. In the cup: red currant and raspberry, lifted by passion fruit acidity and rounded off with a vivid red candy sweetness.
THE PRODUCER
El Dorado was purchased by the Elder family in 2017 and has since been developed in close partnership with CVM, a company owned by Bernard Uhe and his Colombian coffee-growing family from the Ibagué region — bringing generational specialty coffee expertise to Ecuadorian soil. The estate initially grew almonds before transitioning to specialty coffee, and now cultivates five premium varieties — Green-Tip Geisha, Golden-Fruit Geisha, Wush Wush, SL28, and Heicha — across four plots, each tailored to the specific needs of the variety grown within it.
The farm's natural advantages are considerable: high altitude, fertile volcanic soil, mineral-rich mountain spring water, year-round shade trees, and a consistent twelve hours of daily sunlight. These conditions, combined with natural farming practices including neem oil and organic compost, have earned El Dorado significant recognition — most notably a 4th place finish at the 2022 Cup of Excellence and a 3rd place finish at Ecuador's 2023 Golden Cup Competition.
THE PROCESS
The Extra Fermented Washed process at El Dorado involves:
🍒 Hand-picking — Ripe, bright-red cherries selected at peak ripeness 🛍️ Whole-cherry fermentation — Cherries fermented sealed in bags for 4–5 days, turned four times daily; duration adjusted by temperature (4 days at 20°C and above, 5 days at 19°C and below) 🔧 De-pulping — Skin removed following the first fermentation stage 🛍️ Second fermentation — Depulped beans returned to bags for a further 4–5 days under the same temperature-controlled protocol 💧 Washing — Beans thoroughly cleaned once both fermentation stages are complete
The defining step is the double-fermentation structure — two sequential fermentation stages, first with the cherry intact and again after depulping, building exceptional aromatic depth and the vivid fruit complexity that characterises this lot.
