INTRO A big, syrupy Gesha from one of the best in the game — Francy Morales has yet again produced a stunning cup this season. Bright peach and sparkling grape lead, with a stone fruit and agave sweetness, gliding into a fragrant, nectarous floral finish. In the cup: peach, grapes, and agave.
THE PRODUCER Francy Leonor Marín Morales has been cultivating coffee for seven years. Alongside her husband Gilberto, she grows Pink Bourbon and Gesha across two hectares at her fincas La Montañita and Villa Sofía, in the vereda of El Palmar, San Agustín. Both Francy and Gilberto come from coffee-growing families, and together they carry out all year-round farm chores themselves, hiring three local pickers only during peak harvest for the careful, tedious hand-selection of cherries.
Her coffees have placed in the top 5 in their region at two Copa de Oros, an annual regional cup competition — and in 2024, Francy took the overall grand prize with her washed Pink Bourbon, becoming the first woman ever to win it.
THE PROCESS This washed Gesha was fermented in cherry for roughly 24–30 hours, then depulped and dry-fermented in a wooden tank for another 24–30 hours, before drying in a shaded patio on raised beds for 20–25 days.
The double fermentation — first in cherry, then dry in a wooden tank — is the defining step here — it's what builds the big, syrupy body and layered peach and grape sweetness that define this cup.
THE CUP Big and syrupy — bright peach and sparkling grape sweetness up front, with stone fruit and a sugary, preserve-like sweetness and a light citrus accent. Florals and tart fruit come forward as it cools, closing with a fragrant, nectarous floral finish.
