INTRO Selected during a visit to Lost Origin in Panama — out of more than 20 coffees tasted blind, two lots immediately stood out, both turning out to come from Finca Santa Teresa, a farm with a long-standing place in the sourcing program. The Natural lot was chosen for this collaboration specifically to highlight Lost Origin's fermentation and drying work. Guava, pineapple, and passion fruit lead, with a juicy watermelon freshness running throughout. In the cup: guava, pineapple, watermelon, and passion fruit.

THE PRODUCER Finca Santa Teresa has been a trusted source for years, long holding a special place in the sourcing programme. This collaboration with Lost Origin builds on that relationship, applying Lost Origin's precise fermentation expertise to Santa Teresa's Gesha to push the farm's character in a new direction.

THE PROCESS Fermentation took place in custom-built stainless-steel tanks using Lost Origin's base culture — a defined microbial consortium of LOY-007 (a Pichia kluyveri yeast strain) and LOB-002 (a Lactobacillus plantarum bacterial strain). The process ran for 5 days under controlled conditions at an average temperature of 22°C, followed by 27 days of drying in temperature- and humidity-controlled rooms.

The defined microbial consortium fermentation is the defining step — this precise, controlled approach is what builds the vivid tropical fruit character that pushes this cup beyond Finca Santa Teresa's more classic profile.
