About DAK Coffee Roasters

DAK is an Amsterdam roastery founded by two Canadians from Montreal. Its small team selects fully traceable coffees, balancing experimental lots with classic origins, then roasts them for clean, bright and sweet cups that keep specialty coffee welcoming and fun.

Roaster notes

It’s back. One of DAK’s favourites, the unmistakable Macaron—a natural Red Bourbon from Jhoan Vergara at Finca El Diviso. This limited lot bursts with strawberry jam, raspberry macaron, and buttercream. It’s rich, playful, and intensely expressive. Small batch now, more to come soon.

DAK is thrilled to showcase another beautiful lot from Jhoan Vergara, produced at Finca El Diviso in Huila. El Diviso is a collaboration between two family farms—El Diviso (Nestor and Adrian Lasso) and Las Flores (Jhoan Vergara)—just outside Pitalito. Together, these three young producers are elevating quality through shared knowledge and innovation.

This Red Bourbon follows a precise post-harvest process:

  • Manual harvesting of ripe cherries

  • 40-hour fermentation in plastic bags at 16–18°C

  • 20-hour oxidation phase

  • 12–18-hour anaerobic fermentation

  • Washed with hot water for thermal shock

  • Solar-dried for 16–25 days, weather dependent

A carefully crafted cup, true to its name.

Flavour Notes: Raspberry Macaron, Strawberry Jam, Buttercream

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

How it works The whole coffee cherry is dried with the fruit intact, often on raised beds or patios. The dried fruit is removed afterwards.

Typical influence Natural coffees are often described as sweet and full-bodied, with ripe berry or tropical-fruit flavours and sometimes a gentle wine-like note.

About this variety

Bourbon is often associated with a sweet, rounded and balanced cup. Depending on the lot, that can range from gentle fruit and citrus to caramel-like richness.

Why this one is different
  • Colombia
  • Huila
  • Natural

Colombian Red Bourbon can be floral, winey and rich in red fruit. The reviewed washed coffee is lifted and juicy, while honey processing turns that direction towards red plum, silky caramel and dark chocolate. Both feel sweet and rounded, but the process decides whether the cup reads as bright and aromatic or deeper and more indulgent.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

The reviewed lots come from Huila and Valle del Cauca, including a traceable planting at Finca Tamana and a honey-processed lot from Finca Potosí. Their contrasting methods show why farm and process matter as much as the shared Red Bourbon name.

Identification note This context follows the producers' Red Bourbon identification. It is based on two Colombian lots with different processes, so the exact fruit depth, caramel and chocolate character should remain lot-specific.

Classification Bourbon family

Technical lineage Red Bourbon is the red-fruited form of Bourbon, part of the Bourbon-related Arabica group that spread through Latin America during the nineteenth century.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
