INTRO

A vibrant honey-processed Pink Bourbon from Mario Gomez at Finca La Soledad in Huila. The honey process brings out layered sweetness and complexity, with yellow fruit jam, honeycomb richness, and citrus black tea notes. Pink Bourbon is a naturally occurring hybrid known for producing exceptionally sweet and fruit-forward coffees, and this honey processing amplifies those characteristics whilst maintaining a clean, balanced cup.

THE PRODUCER

Mario Gomez operates Finca La Soledad in Huila, Colombia, at 1,800 metres above sea level. Huila is one of Colombia's most celebrated coffee-growing regions, known for its high altitudes, rich volcanic soils, and microclimates that create ideal conditions for specialty coffee production. Finca La Soledad specialises in cultivating Pink Bourbon, a rare and sought-after variety that requires careful attention throughout cultivation and processing to achieve its distinctive flavour profile.

THE PROCESS

The Honey process retains the mucilage layer during drying:

  • šŸ’ Selective Picking — Only ripe cherries harvested
  • šŸ”Ŗ Depulping — Skin removed, sticky mucilage layer retained
  • ā˜€ļø Sun Drying — Beans dried with mucilage intact on raised beds or patios
  • šŸ‘€ Monitoring — Regular turning to ensure even drying and prevent fermentation defects
  • 🫘 Hulling — Dried mucilage removed once optimal moisture reached

This process creates a cup that balances the clarity of washed coffees with the sweetness and body of naturals.

THE CUP

Yellow fruit jam with honeycomb richness. Citrus black tea notes add brightness and complexity. A layered, sweet cup with balance and clarity.
