THE PROCESS The Anaerobic Washed process for "Silky Way" involves:
🍒 In-cherry anaerobic fermentation — 36 hours of anaerobic fermentation while still in cherry 💨 Oxidation — 12 hours of open oxidation 🌱 Post-pulping anaerobic fermentation — a further 36 hours of anaerobic fermentation after pulping 🌡️ Thermal shock — a 50°C (122°F) shock applied for 30 minutes 🔧 Mechanical drying — dried mechanically over 36 hours
