INTRO
A floral, tea-forward Ethiopian from Danche Washing Station in Gedeb, and an unusual one for how it's made — anaerobic fermentation, then washed. The sealed ferment builds complexity while the washing step keeps the cup clean and light. Wild florals lead, peach iced tea sits in the middle, and a black tea note holds the finish. THE PRODUCER
This lot comes from the Danche Washing Station in Gedeb, growing Heirloom varieties at 2,200 masl.
THE PROCESS
Ripe cherries are selectively handpicked, hand-sorted, and floated. They're then de-pulped and left in sealed tanks to ferment for 48 hours without the presence of oxygen. After fermentation, the parchment is washed twice with clean water before drying on raised beds for 15-20 days.
The sealed 48-hour anaerobic fermentation followed by a double wash is the defining step — it's what builds the floral complexity behind the wild floral and peach iced tea character, while the washing keeps the cup clean and light rather than heavy or ferment-forward.
