The Producer:

This coffee comes from the newly established Cata Export Estate, a standout producer in Colombia’s famed Huila region. Built to champion high‑quality microlots, this estate focuses on meticulous cultivation and processing practices that allow exceptional coffees to shine. For Cata Reserva: Vol 2, the estate has dedicated close attention to both field and post‑harvest practices, elevating Pink Bourbon into a truly memorable specialty coffee experience. 

The Process:

The lot is processed using a semi‑washed method, a technique that blends elements of washed and natural processing to achieve both clarity and enhanced sweetness. After harvest, ripe cherries are pulped and briefly fermented before being washed and carefully dried.
