INTRO A beloved year-round staple, built around excellence in anaerobic and co-fermentation processing. This release draws on two summer sense memories at once — backyard barbecue strawberry shortcake and the Good Humor Strawberry Shortcake ice cream bar. Insanely sweet at first sip, like sponge cake, packed with strawberries and a pleasant lemon zest acidity, finished with a smooth, whipped cream-like creaminess. In the cup: sponge cake, strawberries, lemon zest, and whipped cream.

THE PRODUCER This blend combines five coffees from producers across Colombia, each contributing something specific to the final profile:

• 2 parts Forest Coffee, Vanilla Heaven (Quindío) — for creaminess
• 1 part Forest Coffee, Juicy Strawberry (Quindío) — for more strawberry
• 1 part Unblended, Young Producers Project (various Colombian cities) — an experimental blend for added strawberry character
• 1 part Diego Horta, Natural (Huila) — for more red fruit and depth
• 1 part Nestor Lasso, Thermal Shock Caturra (Huila) — for increased acidity

THE PROCESS Two co-ferments handle the red fruit and vanilla character, an experimental blend leans further into strawberry, a natural lot deepens the red fruit profile, and a thermal shock washed lot lifts the acidity — five distinct processing approaches combined to build one unified dessert-like cup.

The vanilla co-fermented component is the defining piece here — it's what gives the blend its whipped cream, vanilla cold foam-like creaminess, tying the whole thing together.

THE CUP Sweet and indulgent — sponge cake sweetness up front, as full of strawberries as a pick-your-own pint basket, with a pleasant lemon zest acidity. Smooth and creamy, like whipped cream or vanilla cold foam.
