  • Edition: Seasonal Halloween release of "The Future"

INTRO
The Future has been a staple of the year-round menu, showcasing excellence in anaerobic and co-fermentation processing, with flavour as the guiding principle. This Halloween release asks which Halloween candy is best, and is a love letter to the fruity treats the roasters hope to find at the bottom of a plastic jack-o'-lantern. In the cup: watermelon candy, Lemonheads, blue raspberry, and green apple caramel sucker.

THE PRODUCER
The blend combines one washed Ethiopian lot with three co-fermented Colombian lots: Aricha (40%), from smallholders in the Aricha community in Yirgacheffe; Sebastian Ramirez's Watermelon (25%) and Red Fruits (20%) from Quindío; and Huver Castillo's Aponte Florale (15%) from Buesaco, Nariño.

THE PROCESS
To re-create fruity, nostalgic flavours, the washed Aricha lot supplies the vibrant acidity associated with these candies, while the three co-fermented lots deliver fruit flavour in spades.

Blending one washed Ethiopian with three co-ferments is the defining structure. It's what gives the cup its zippy, fruity intensity, with the washed lot holding the acidity.

THE CUP
Fun, fruity, and decidedly not subtle: sweet and zippy, like the best trick-or-treating hauls, with watermelon candy, Lemonheads, blue raspberry Jolly Ranchers, and caramel apple pops.

How it works Producers use “co-ferment” for different recipes, often involving fruit, juice, botanicals or a prepared fermentation medium. The producer’s details should explain exactly what was added and when.

Typical influence The added input can strongly influence the cup, but the result depends on the producer’s recipe. This coffee’s own tasting notes are the best guide.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Colombia & Ethiopia
  • Co-ferment

In Colombia & Ethiopia, local selection, replanting and farm history can shape a mixed population over many generations.

Co-ferment covers different producer-defined recipes involving added ingredients or fermentation media. It can strongly influence the cup, so the producer’s disclosure and this coffee’s tasting notes are the best guide.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
