INTRO From Pepe Jijón's Finca Soledad in Ecuador's Intag Valley — a truly lovely Sidra, floral and tea-like with an aroma of white flowers, sipping like a delicate oolong tea. Anaerobic fermentation shines through in tropical mango notes and a surprising touch of red grape. So pretty and complex, it drinks like a black-label coffee. In the cup: white flowers, oolong tea, mango, and red grapes.

THE PRODUCER Before settling on a coffee farm, Pepe Jijón spent his days traversing mountains — an avid mountaineer and guide who explored some of the world's most impressive ranges, even completing a solo expedition of the "Seven Summits" before finding his next great adventure in coffee. He found a soft place to land in the Intag Valley, nestled among the sloping mountains of Imbabura, Ecuador. Today he nurtures about four hectares at Finca Soledad, cultivating exceptional lots across several varieties, including this Sidra.

THE PROCESS Whole cherries, handpicked at peak ripeness, undergo an initial fermentation in sealed tanks for 72 hours. They're then moved to a dark room for very slow drying — a process that can take up to 50 days, with temperature strategically manipulated throughout.

The extended 50-day dark-room drying is the defining step — it's what allows the anaerobic fermentation's tropical mango and red grape character to develop fully alongside Sidra's naturally floral, tea-like base.

THE CUP Floral and delicate — white flowers and oolong tea-like structure up front, with tropical mango and a surprising red grape note coming through from the anaerobic fermentation. Complex and refined, punching well above its price point.

How it works The cherry skin is removed, but some of the sticky fruit layer stays around the coffee seed while it dries.

Typical influence The cup can balance washed clarity with natural sweetness, sometimes bringing a rounded body and stone-fruit or caramel-like flavours.

About this variety

Sidra is often chosen for a highly aromatic, floral and sweet cup. Citrus, stone fruit and tropical fruit are common reference points in expressive lots.

Why this one is different
  • Ecuador
  • Imbabura
  • 1550 masl
  • Honey

The reviewed Ecuadorian Sidras are fragrant, clean and fruit-forward, with orange blossom or rosehip, strawberry, peach, kiwi and tropical fruit appearing across the range. Most are washed, which keeps the cup bright and precise. Producer-specific drying or fermentation can add extra sweetness and texture without replacing that floral lift.

Honey or pulped-natural processing often adds roundness and sweetness while keeping some of the fruit definition of a washed coffee.

A little background

Sidra has become closely associated with Ecuadorian specialty coffee, but it is grown across distinct regions including Loja, Chimborazo, Intag and Saraguro. The reviewed lots share clarity and perfume, while their individual farms and processes create noticeably different fruit profiles.

Identification note Sidra and Sydra are both used in Ecuador. Recent genetic work confirms Sidra material exists but also found misidentified plants in the specialty seed supply, so producer traceability remains more reliable than the name alone.

Classification Reported cultivar

Technical lineage Recent genetic evidence places confirmed Sidra within the Core Ethiopia group. Older Bourbon and Typica family explanations should therefore be treated cautiously.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
