INTRO A blend of two lots situated on opposite ends of the fermentation spectrum — Luna, a squeaky clean, washed Gesha that exemplifies varietal character through and through, and a Caturra lot processed through Diego's "Anti-Maceration" method, so intensely funky and fermentation-forward it demands a step back on its own. Blended together, they create something altogether unique: passion fruit and tropical notes mingle with cooked peach preserves, sipping like natural wine and finishing like craft chocolate. In the cup: passion fruit, peach preserves, natural wine, and craft chocolate.

THE PRODUCER Diego Bermudez needs little introduction in specialty circles. Known for understanding processing in a way few producers do, his command of primary and secondary fermentation has produced some of the wildest flavour experiences around, with detractors once suspecting his results were too vivid to be natural. This release, combining two lots from opposite ends of his processing spectrum, is another lesson in what contemporary coffee processing can achieve.

THE PROCESS The Luna component (Gesha) is Thermal Shock Washed — clean, precise processing that lets the variety's character lead. The Caturra component undergoes Diego's proprietary "Anti-Maceration" process, an intensely fermentation-forward method that pushes funk and complexity to their limits.

Blending these two opposing approaches is the defining step here — the clean Luna Gesha gives the Caturra's intense fermentation character room to breathe, building the passion fruit and peach preserves complexity that define this cup without letting the funk overwhelm it.

THE CUP Still distinctly funky, but with room to breathe — tropical passion fruit mingles with cooked stone fruit like peach preserves. Sips like natural wine, finishes like craft chocolate. Fermentation still fuels the flavour, but the Luna lot gives it space to move — if it doesn't click at first sip, a few days' rest can shift the profile considerably.
