About Black & White Roasters
Black and White Coffee Roasters is the brainchild of two US Barista Champions. Founded in 2017, Kyle and Lem were inspired by the coffee they experienced at the competitive level and wanted to make those coffees as widely available as possible.

INTRO From Diego Bermudez at Finca El Paraiso — a restrained, luminous Gesha that trades his usual funk-forward intensity for clarity and precision. Where much of Diego's work leans into bold, experimental territory, this lot holds back, letting a delicate cascade of white fruit, tea, and floral notes lead. In the cup: white peach, white tea, green grape, and honeycomb.
THE PRODUCER Diego Bermudez needs little introduction in specialty circles. His command of fermentation science has produced some of the most nuanced — and at times controversial — flavour profiles in contemporary coffee, with detractors once suspecting his results were too vivid to be natural. They aren't: they're the product of meticulous, deliberate processing work, and this lot is another study in restraint over spectacle.
Gesha, prized worldwide for its delicate florality and tea-like clarity, is an especially demanding canvas — it rewards precise processing but shows every flaw. Here, it's given room to express its most understated qualities rather than being pushed toward maximal fruit intensity.
THE PROCESS The Advanced Washed process at Finca El Paraiso involves:
🍒 Hand-picking — cherries selectively harvested at peak ripeness 🧪 Double anaerobic fermentation — fermented whole in cherry, then again after pulping, each stage with a Gesha yeast culture 🌡️ Thermal shock wash — a proprietary rapid temperature-change protocol that locks in aromatics and sharpens cup clarity ☀️ Drying — dried slowly in a temperature-controlled room with regular recirculation to optimal moisture
The thermal shock wash is the defining step — by fixing volatile aromatic compounds right after fermentation, it preserves the clarity and restraint that define this cup, rather than pushing toward the heavier funk of Diego's more experimental lots.
THE CUP A restrained, luminous Gesha built on white fruit and floral clarity — white peach and white tea up front, green grape's subtlety threaded through, and a honeycomb sweetness that lingers into a long, oolong-like finish. Diego Bermudez's precision, in its most understated form.
