INTRO From the Bambú plot at Los Lajones Estate in Boquete — an intensely aromatic washed Geisha. Bold jasmine and creamy gardenia aromatics lead, with a crisp peach sweetness and bright orange juice acidity underneath. In the cup: jasmine, gardenia, peach, and orange juice.
THE PRODUCER This lot comes from Graciano Cruz's work on the Bambú plot at Los Lajones Estate, high above 1,900 metres in Boquete, Panama.
THE PROCESS Cherries undergo a 24-hour whole-cherry fermentation, followed by 36 to 40 hours of wet fermentation, then dry on bamboo beds.
The extended two-stage fermentation, combined with drying specifically on bamboo beds, is the defining step — it's what builds the intense floral aromatics behind the jasmine and gardenia character, while preserving the crisp peach and orange juice brightness that define this cup.
