INTRO
Wilmer's story is one of resilience, tenacity, and perseverance — a light roast with gooseberry tartness, bright citrus acidity, and a toffee finish. In the cup: gooseberry, bright citrus, and toffee.
THE PRODUCER
After his father's passing, Wilmer's family had to abandon their farm due to inherited debt. His mother and sister moved to a nearby city, but Wilmer stayed to work and recuperate the farm — within a few years he'd turned things around and paid off the family's debt. When his family heard of his success, they returned and demanded the farm back, despite having abandoned it. Wilmer selflessly accepted this and chose to start over.
Over the following years, Wilmer built a new farm from raw mountain jungle, working on nearby farms by day and his own in the evenings. With the help of a few workers, he planted nearly 7,000 coffee trees across different varieties. He was eventually able to buy the original family farm back and connect it to his new one, and continues to invest and grow with the same vision and motivation.
THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Pink Bourbon's naturally bright, tart character to come through with clarity. Huila's high altitude, volcanic soil, and cloud-limited sun exposure slow cherry ripening, concentrating sugars and building the dense, complex beans behind the gooseberry and toffee character in this cup.
THE CUP
Bright and complex — tart gooseberry leads, with a bright citrus acidity throughout and a toffee finish. A well-earned expression of Wilmer's hard-won farm.
