INTRO
Vibrantly rich and fruit-forward, this Pink Bourbon is treasured for its complex taste profile. Rooibos structure runs through the cup, with tropical fruit sweetness and an orange panettone richness. In the cup: rooibos, tropical fruit, and orange panettone.

THE PRODUCER
Diego Vergara is a progressive coffee producer at Finca Las Flores in Huila, Colombia's most prolific coffee-growing region. High altitude and volcanic soil mean the farms sit on rich, nitrogen-dense ash from the nearby Andean peaks and the Colombian Massif, while cloud cover limits sun exposure, creating microclimates that let cherries ripen slowly. That slow maturation concentrates sugars and builds dense, complex beans.

THE PROCESS
After careful picking, cherries are floated in water containing 5% alcohol, then undergo a 36-hour anaerobic fermentation before moving to open tanks for an oxidation stage. A second anaerobic fermentation follows once the cherries are depulped. The fermentation is then stopped abruptly with hot water, followed by quenching the beans in cold water, a temperature contrast that opens the pores on the bean surface to lock in the volatile compounds behind the coffee's depth of flavour. The coffee then dries in the sun under a canopy.

The hot-then-cold quench is the defining step. It locks in the volatile compounds built up through the double anaerobic fermentation, which is where the tropical fruit and panettone richness comes from.

THE CUP
Rich and fruit-forward: rooibos structure throughout, with tropical fruit sweetness and an orange panettone depth. Complex and layered.

About this variety

Pink Bourbon, also sold as Rosado, is often chosen for a bright, floral and fruit-forward cup. Tropical fruit, citrus and stone fruit are useful reference points, but the lot’s own notes should lead.

Why this one is different
  • Colombia
  • Huila
  • 1750 masl
  • Washed

Colombian Pink Bourbon often feels perfumed and lifted, with orange blossom, rose, bright citrus, peach or tropical fruit and a silky, tea-like finish. The reviewed coffees range from clean washed lots to naturals and co-ferments, where processing can push the cup towards candy, spice or deeper fruit. The producer's tasting notes are the best guide to this particular bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Pink Bourbon, also called Rosado, became prominent through Colombian specialty producers and is now grown across several regions. The reviewed selection shows why it is sought after: even with very different processes, floral aromatics, lively fruit and a refined texture appear repeatedly.

Identification note Pink Bourbon or Rosado is a widely used Colombian name, but genetic testing shows it is not Bourbon. Some tested lots also contained mixed plant material, so the producer's identification remains important for each coffee.

Classification Reported cultivar

Technical lineage Recent genetic testing places tested Pink Bourbon material with Ethiopian landrace coffee rather than the Bourbon family. The familiar name is retained because it is the name used by producers and roasters.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
