INTRO
Founded in 2015, Arsosala washing station serves around 1,200 smallholder producers from the Guji region — a light roast with jasmine, rose, and stone fruit character. In the cup: jasmine, rose, and stone fruit.
THE PRODUCER
Guji is a beautifully forested area in southern Ethiopia, considered part of Sidama before the early 2000s but now its own recognised region. Coffee here grows on small plots alongside other crops, with high altitude and rich red soil setting its profile apart — fruits, light florals, and deep chocolate. Farmers deliver cherry to washing stations like Arsosala, which can serve anywhere from several hundred to over a thousand producers, blended into day lots that make precise producer-level traceability difficult. Farmers in the region typically lack access to fertilisers or pesticides, so none are used in production.
THE PROCESS
Cherries are picked ripe and depulped the same day they're harvested. They ferment overnight before being washed clean and dried on raised beds — typically taking one to two weeks under the sun, though up to twenty days in cloudy conditions.
The overnight fermentation combined with same-day depulping is the defining step — it's what builds the clean jasmine and rose aromatics behind this cup, with stone fruit character rounding out the finish.
THE CUP
Light and floral — jasmine and rose aromatics lead, with a stone fruit sweetness on the finish. A clean, classic expression of Guji's characteristic profile.
